Ingredients

  • 1.3 lbs turkey steaks
  • 14 oz turnip greens
  • 7 oz brown rice
  • 3.5 oz grated Parmesan cheese
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 medium carrot, grated
  • 10.5 oz sliced mushrooms
  • 7 oz heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Juice of 1/2 lemon

Instructions

  1. Season 1.3 lbs turkey steaks with salt, pepper, 1 teaspoon garlic powder, 1 teaspoon sweet paprika, 1/2 teaspoon ground cumin, and 1/4 teaspoon ground nutmeg.
  2. Wash the 14 oz turnip greens thoroughly and cut them into small pieces. Set aside.
  3. In a pot, cook 7 oz brown rice according to the package instructions, using about one cup of rice to four cups of water and salt to taste. When ready, mix in half of the 3.5 oz grated Parmesan cheese. Set aside.
  4. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add 1 chopped medium yellow onion, 3 minced garlic cloves, and 1 grated medium carrot. Sauté until the vegetables are soft and lightly golden.
  5. Add the chopped turnip greens to the skillet and cook for another 2–3 minutes until they are tender but still crisp. Set aside.
  6. In the same skillet, add 10.5 oz sliced mushrooms and cook for 2–3 minutes. Add 7 oz heavy cream, 1 teaspoon dried thyme, salt, and pepper to taste. Bring the sauce to a boil, then reduce the heat and let it simmer for another 5 minutes until it thickens slightly.
  7. Place the turkey steaks in the skillet with the creamy mushroom sauce, cover, and let them cook over low heat for about 10–15 minutes, or until the steaks are cooked through and the sauce has thickened.
  8. Serve the stuffed turkey steaks with the creamy mushroom sauce on top, accompanied by the remaining brown rice and turnip greens. Sprinkle the remaining grated Parmesan cheese on top and drizzle with the juice of 1/2 lemon.
